- Pat the pork shoulder dry with paper towels and rub the spice blend (smoked paprika, garlic powder, onion powder, cumin, pepper, and salt) all over it.
- Place the seasoned pork in the slow cooker and pour the chicken broth around it. Cover and cook on low for 8 hours or high for 4–5 hours.
- In a large bowl, combine the shredded cabbage and carrots. In another bowl, whisk together the mayonnaise (or yogurt), apple cider vinegar, and honey. Toss the dressing with the veggies until well-coated.
- Shred the pork and mix with your favorite barbecue sauce. Warm the buns and assemble the sandwiches with the pork and coleslaw.
