- Spread a thin layer of Boursin cheese on one side of each slice of bread.
- Place a generous layer of smoked salmon on two of the bread slices.
- Top the smoked salmon with a slice of melting cheese.
- Cover each prepared slice with another piece of bread, Boursin-side down.
- Heat a skillet over medium heat and add butter. Once melted, place the sandwiches in the pan.
- Cook for 2-3 minutes per side until they're golden brown and crispy.
- Once toasted, transfer the sandwiches to a cutting board and slice them diagonally. Serve immediately.
