Ingredients
  

  • 1 pound smoked sausage e.g. Mattesson’s or Hillshire Farms
  • 8 ounces pasta e.g. penne or any preferred shape
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 unit bell pepper sliced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese optional for topping
  • to taste salt
  • to taste pepper
  • to garnish fresh herbs e.g. thyme or parsley

Method
 

  1. Cook the pasta al dente according to the package instructions and reserve some pasta water.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced smoked sausage and brown for about 5 minutes.
  4. Add chopped onion, bell pepper, and minced garlic to the skillet, cooking until softened.
  5. Pour in heavy cream and stir well to combine with the sausage and veggies.
  6. Adjust the thickness by adding reserved pasta water if needed, and season with salt and pepper.
  7. Toss the cooked pasta into the skillet, mixing well to coat with sauce.
  8. Serve hot, topped with grated Parmesan and fresh herbs if desired.
