- Bake for 60-70 minutes, or until the center is set but still slightly jiggly. Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then whisk until smooth and glossy. Allow the ganache to cool slightly before pouring it over the chilled cheesecake.
- Arrange jumbo marshmallows on top of the ganache layer, leaving some space between them. Use a kitchen torch to toast the marshmallows to your desired doneness.
