Ingredients

  • 450 g frozen sweet peas thawed or canned peas, drained
  • 2 hard-boiled eggs chopped
  • 4-6 slices cooked, crispy bacon crumbled or 1 cup diced cooked ham (optional)
  • ½ cup chopped green onions or yellow onions if you prefer
  • 1 cup shredded cheddar cheese or another cheese of your choice
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ½ teaspoon celery seeds or ½ cup chopped celery
  • a pinch cayenne pepper for a subtle kick
  • ½ cup mayonnaise
  • ½ cup sour cream

Equipment

  • Large mixing bowl
  • Small whisking bowl
  • Spatula
  • Sharp knife
  • Airtight container

Method

  1. In a large mixing bowl, combine the thawed peas, chopped eggs, crumbled bacon (or diced ham), green onions, and shredded cheese.
  2. Sprinkle in the black pepper, salt, garlic powder, celery seeds, and a pinch of cayenne. Gently toss to distribute seasoning evenly.
  3. In a small bowl, whisk together the mayonnaise and sour cream until smooth.
  4. Pour the dressing over the salad and gently fold it in, being careful not to mash the peas.
  5. Cover the salad and let it chill in the fridge for at least an hour before serving.

Notes

For an extra layer of flavor, toast your bacon in the oven instead of frying it.
Store any leftovers in an airtight container in the fridge for up to 3 days; the flavors deepen over time.
If you're transporting it, keep it chilled with ice packs.
Adjust the seasoning to your preference, especially if using salty ingredients like bacon or ham.
Feel free to experiment with different cheeses or add extra veggies for variety!
