- Pat the steak slices dry and season with the spice rub.
- Heat olive oil in a skillet over medium-high heat and sear the steak for 3-4 minutes on one side.
- Flip the steak and cook for another 2-3 minutes for medium-rare.
- Remove the steak and let it rest.
- In the same skillet, add bell pepper and onion and sauté for 5-6 minutes.
- Add corn and cook for another 2 minutes until heated through.
- Slice the rested steak against the grain.
- Build the bowls with rice, sautéed veggies, steak, avocado, cherry tomatoes, and cilantro.
