Ingredients

  • 1 lb flank steak, thinly sliced
  • 1 tbsp chipotle chili powder
  • 1 tbsp cumin
  • Cooked rice (white or brown, your choice)
  • Olive oil to taste
  • Diced avocado, chopped cilantro, lime wedges, and sour cream (optional) for garnishing

Equipment

  • Large mixing bowl
  • Skillet or frying pan
  • Measuring spoons
  • Tongs or spatula
  • Kitchen knife and cutting board

Method

  1. In a large bowl, combine the thinly sliced flank steak with chipotle chili powder, cumin, salt, and pepper. Drizzle with olive oil and mix well to coat the steak evenly. Let marinate for at least 30 minutes or up to 2 hours.
  2. While the steak is marinating, cook the rice according to package instructions until fluffy.
  3. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Add marinated steak slices in a single layer and cook for about 2-3 minutes on each side until browned and cooked through.
  4. Divide the cooked rice among bowls, top each with the cooked steak, and add garnishes like diced avocado, cilantro, lime, and sour cream.

Notes

Marinate the steak for longer for more intense flavors. Use sirloin or chicken as alternatives to flank steak. Quinoa or cauliflower rice makes for a healthier grain option. Garnishes are key for enhancing flavor and presentation, so don’t skip them!
