Ingredients
  

  • 2 bowls cooked fries leftover or freshly made
  • 2 tablespoons vegetable oil
  • 2 unit onions finely chopped
  • 1 unit tomato diced
  • 1 cup spicy chili tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 0.5 teaspoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon red pepper flakes
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh cilantro chopped

Method
 

  1. Heat the oil in a large skillet over medium heat.
  2. Sauté the chopped onions until they turn golden brown and soft.
  3. Add the diced tomatoes and cook until they break down into a thick consistency.
  4. Stir in the cumin, garam masala, paprika, and black pepper; toast for about 2 minutes.
  5. Add the cooked fries to the skillet and mix well to coat them in the onion-tomato mixture.
  6. Stir in the turmeric, spicy tomato paste, and red pepper flakes; let meld for a minute.
  7. Sprinkle chopped cilantro on top and taste-test; adjust seasonings if necessary.
