Spicy Tuna Noodles

Ingredients
  

  • 280 g wide rice noodles or spaghetti
  • 4 steaks yellowfin tuna about 2 packs
  • 2-4 tablespoons vegetable oil
  • 3 large cloves garlic sliced thinly
  • 2 bird's eye chilies or red chilies, finely chopped
  • 1 onion sliced
  • 1 red bell pepper red bell pepper sliced
  • 2 teaspoons fish sauce
  • 2 green onions chopped
  • 1 cup Thai basil leaves or regular basil
  • 1 lime juice of
  • lime slices for serving

Equipment

  • Large skillet or wok
  • Sharp knife and cutting board
  • Small mixing bowl
  • Tongs or spatula
  • Other kitchen utensils

Method
 

  1. Prepare the sauce by mixing all the sauce ingredients in a small bowl and set aside.
  2. Heat 2 tablespoons of oil in a large skillet over medium-high heat and cook the tuna steaks for about 3.5 minutes per side. Remove from pan and let rest.
  3. In the same skillet, add more oil and stir-fry the onion and red bell pepper until the onion turns translucent, then add the garlic and chili.
  4. Drizzle the fish sauce into the skillet and give everything a good stir to coat the veggies evenly.
  5. Toss in the cooked noodles, green onions, and reserved sauce, stir-fry for about a minute until everything is well combined.
  6. Remove from heat and stir in the basil leaves and lime juice.
  7. Serve the noodles in bowls, topped with tuna steak and garnished with extra basil, green onions, and lime wedges.

Notes
