Ingredients

  • 1 cup All-Purpose Flour
  • 2 large Eggs (beaten)
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • 1/2 cup Olive Oil
  • 1/2 cup Marinara Sauce
  • 1/4 cup Fresh Basil (optional) for garnish
  • to taste Salt and Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder; let sit for 5-10 minutes.
  3. Set up a breading station with flour, beaten eggs, and a mixture of panko breadcrumbs and grated Parmesan.
  4. Dredge chicken breasts in flour, dip in eggs, then coat with the panko-Parmesan mixture.
  5. Heat olive oil in a skillet over medium heat and cook the chicken for 4-5 minutes per side until golden-brown.
  6. Transfer chicken to a baking dish and spoon marinara sauce over each breast; sprinkle shredded mozzarella on top.
  7. Bake in the preheated oven for 15-20 minutes until cheese is bubbly and chicken is cooked through.
  8. Garnish with fresh basil and serve hot.
