Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages cream cheese, softened 8 oz each
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup strawberry puree fresh or frozen strawberries blended
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with water 2 tablespoons water
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and 1 cup granulated sugar until smooth. Add eggs one at a time, then stir in vanilla, sour cream, and flour until smooth. Fold in strawberry puree.
  4. Pour cheesecake batter over the crust, smoothing the top. Bake for 50-60 minutes until edges are set and center is slightly jiggly. Let cool in oven with door ajar for about 1 hour.
  5. In a medium saucepan, combine sliced strawberries, 1/4 cup granulated sugar, and lemon juice. Cook until strawberries release juices, then add cornstarch mixture and cook until thickened. Let cool.
  6. Whip heavy cream, powdered sugar, and vanilla extract in a large mixing bowl until soft peaks form. Spread strawberry topping over chilled cheesecake and dollop with whipped cream before serving.
