Ingredients
  

  • 1 cup graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 packages cream cheese, softened 8 ounces each
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • ¼ cup powdered sugar for dusting
  • q.s. whipped cream for garnish optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake for 5 minutes, then set aside to cool.
  5. In a large mixing bowl, beat the softened cream cheese with the granulated sugar until creamy and smooth.
  6. Add the eggs one at a time, beating well after each addition.
  7. Mix in the vanilla extract.
  8. Gently fold in the diced strawberries, being careful not to overmix.
  9. Pour the cream cheese mixture over the prepared crust in the springform pan.
  10. Bake in the preheated oven for 40-45 minutes, or until the center is set and the edges are lightly browned.
  11. Remove from the oven and let the cheesecake cool completely in the pan.
  12. Once cooled, refrigerate for at least 4 hours or overnight for the best results.
  13. Before serving, dust the top of the cheesecake with powdered sugar and add a dollop of whipped cream if desired.
