- Pour the mixture evenly into popsicle molds or small paper cups.
- Melt the white chocolate and coconut oil together in the microwave in 30-second intervals, stirring until smooth.

- Crush the dried strawberries and puffed rice cereal into fine crumbs.
- Once the bars are frozen solid (about 4 hours), dip them into the white chocolate mixture.
- Roll the dipped bars in the strawberry-rice topping.
- Serve immediately or return them to the freezer for later.
