- Preheat your oven to 180°C (350°F).
- Cut the tops off the pumpkins and scoop out the seeds.
- Brush the insides lightly with olive oil and season with salt and pepper.
- Place the pumpkins and their lids on a baking sheet and bake for 20 minutes.
- Heat a drizzle of olive oil in a skillet and sauté the chopped onion until translucent.
- Add the turkey lardons and cook until golden and crispy.
- Toss in the chestnuts, breaking them into smaller pieces.
- Pour in the heavy cream and stir until the mixture thickens slightly.
- Cube the Saint-Nectaire cheese and stir gently into the warm filling.
- Fill each pumpkin generously with the cheesy mixture.
- Put them back into the oven for 10 more minutes.
- Garnish with fresh parsley before serving.
