- In a large bowl, cream the butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Chill the dough in the fridge for at least 30 minutes.
- In a bowl, mix together the mashed sweet potatoes, brown sugar, cinnamon, nutmeg, ginger, and vanilla extract until smooth.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop 2 tablespoons of cookie dough and flatten it into a disk shape.
- Place a small amount of cheesecake filling in the center of each dough disk, followed by a dollop of sweet potato pie filling.
- Cover with another flattened piece of cookie dough and seal the edges tightly.
- Place the assembled cookies on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges of the cookies are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
