Method
 

  1. Pat the steaks dry with a paper towel.
  2. Rub both sides of the filet mignons with salt and pepper and let them sit for a few minutes.
  3. Heat a skillet over medium-high heat and add the olive oil once hot.
  4. Sear the steaks in the skillet for about 4 minutes on each side for medium-rare doneness.
  5. Remove the steaks from heat and let them rest for a few minutes before serving.
