- Preheat your oven to 180°C (350°F).
- In a large pan, heat olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Season the filet mignon with salt and pepper. Brown the pork in the pan on all sides for about 5 minutes.
- Remove the pan from heat and spread Boursin cheese over the top of the pork.
- Optionally, add a thin layer of mustard over the Boursin cheese for added tanginess.
- Transfer the pan to the oven and bake for 15 to 20 minutes, or until the internal temperature reaches 65-70°C (150-160°F).
- After baking, allow the pork to rest for 5 minutes before slicing into medallions.
- Garnish with chopped parsley and serve hot with roasted vegetables or mashed potatoes.
