Ingredients
  

  • 1 filet mignon Pork filet mignon
  • 150 g Boursin cheese
  • 2 tablespoons Olive oil
  • 1 clove Garlic, minced
  • 1 bunch Fresh parsley, chopped
  • to taste Salt and pepper
  • 1 tablespoon Mustard (optional) for added tanginess
  • 200 ml Heavy cream (optional) for added creaminess

  • Meat thermometer
  • Knife and cutting board

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a large pan, heat olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  3. Season the filet mignon with salt and pepper. Brown the pork in the pan on all sides for about 5 minutes.
  4. Remove the pan from heat and spread Boursin cheese over the top of the pork.
  5. Optionally, add a thin layer of mustard over the Boursin cheese for added tanginess.
  6. Transfer the pan to the oven and bake for 15 to 20 minutes, or until the internal temperature reaches 65-70°C (150-160°F).
  7. After baking, allow the pork to rest for 5 minutes before slicing into medallions.
  8. Garnish with chopped parsley and serve hot with roasted vegetables or mashed potatoes.
