  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp cocoa powder
  • 4 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (optional)

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 15x10 inch jelly roll pan.
  2. In a medium bowl, sift together the flour, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  4. One at a time, add the eggs to the mixture, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the frosting by beating the softened butter until creamy, then gradually adding in the powdered sugar and cocoa powder, alternating with the milk.
  8. Once the cake is done, let it cool for a few minutes, then spread the frosting evenly over the top, adding pecans if desired.
