  • 1 handful fresh mint leaves
  • 1-2 fresh red chilies adjust for spice level
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar or coconut sugar
  • 1 tablespoon fish sauce or plant-based alternative
  • 1 clove garlic minced
  • a pinch red pepper flakes optional
  • toasted for garnish sesame seeds optional

Method
 

  1. In a small bowl, combine the lime juice, rice vinegar, and sugar; stir until the sugar dissolves.
  2. Add the fish sauce and whisk in.
  3. Mix in the minced garlic and red pepper flakes (if using).
  4. Taste and adjust the sweetness or heat level as desired.
  5. Slice the cucumbers thinly and place them in a large mixing bowl.
  6. Add the chopped cilantro and mint to the cucumbers and mix gently.
  7. Pour the dressing over the cucumbers and toss gently to coat.
  8. Transfer to a serving platter and sprinkle with toasted sesame seeds and whole mint leaves for garnish.
