Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon powder
  • a pinch salt
  • 200 g butter (175 g for the cake and 25 g for the topping)
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1 tsp grated lemon zest
  • 1/2 cup pineapple syrup or juice from the pineapple slices tin
  • 2 tsp vanilla essence
  • 1 tin pineapple slices
  • q.s. maraschino cherries halved

Method
 

  1. Start by softening the butter at room temperature for at least 2 hours.
  2. Preheat your oven to 325°F (165°C).
  3. In a stand mixer, beat 175 grams of butter with 3/4 cup of white sugar until light and fluffy.
  4. Incorporate the eggs one at a time, then stir in the vanilla essence and lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  6. Gradually mix half of the dry ingredients into the batter, followed by half of the pineapple syrup; repeat with the remaining dry ingredients and syrup.
  7. Grease the cake pan generously with butter.
  8. Melt the remaining 25 grams of butter in the microwave, pour it into the cake pan, and swirl to coat; top with brown sugar.
  9. Lay the pineapple slices over the brown sugar and place halved maraschino cherries in the center of each slice.
  10. Pour the cake batter over the arranged pineapples and cherries and bake for 45 minutes or until done.
  11. Allow the cake to cool for 5-10 minutes before flipping it onto a large plate.
