- Preheat your oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, cut side up.
- In a large skillet, heat a bit of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant.
- Add the ground turkey to the skillet and cook until browned and fully done. Stir in the cooked rice, diced tomatoes, and Italian seasoning. Season with salt and pepper to taste.
- Carefully spoon the turkey and rice mixture into each pepper, filling them to the top. If using cheese, sprinkle it over the top.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the peppers are tender and the cheese is golden and bubbly.
- Let the peppers cool for a few minutes before serving.

Choose firm, crisp peppers for the best texture. Soft or wrinkled peppers won’t hold up well during baking. For added flavor, consider mixing in spices like cumin, oregano, or thyme.
