Ingredients

  • 1 pound ground beef (80/20) For the best flavor
  • ¾ cup water
  • 1 package taco seasoning mix (1.25 ounce)
  • 18 ounce restaurant-style tortilla chips
  • 1 cup shredded sharp Cheddar cheese Or more
  • 1 can refried beans (15.5 ounce)
  • 1 can pitted black olives (10 ounce) drained and chopped
  • 1 cup salsa Your favorite heat level
  • 1 cup sour cream
  • 4 pieces green onions diced
  • 1 can sliced jalapeño peppers (4 ounce) drained

Equipment

  • Large skillet
  • Large baking sheet
  • Spoon and spatula
  • Knife and cutting board
  • Aluminum foil

Method

  1. Move your oven rack about 6 inches from the top heating element and turn on the broiler; line your baking sheet with aluminum foil.
  2. Heat a skillet over medium heat and add the ground beef, breaking it into small crumbles as it cooks for about 5-10 minutes until there's no more pink.
  3. Drain the excess grease, then add water and taco seasoning to the beef, simmering for 8-10 minutes until the sauce thickens and coats the beef.
  4. On the foil-lined baking sheet, layer a generous amount of tortilla chips and sprinkle cheese over them.
  5. Add dollops of refried beans and the taco beef evenly across the chips.
  6. Broil the tray for 3-5 minutes until the cheese is bubbly and melted.
  7. Remove from the oven and add black olives, green onions, sliced jalapeños, sour cream, and salsa as fresh toppings.

Notes

Feel free to swap ground beef for ground turkey or a plant-based crumble for lighter options. Warmed refried beans spread more easily; simply heat them up in the microwave. Customize your toppings as you like—diced tomatoes, corn, and guacamole are great additions. For leftovers, store components separately for the best results, reassembling when ready to enjoy again.
