Ingredients
  

  • 4 large egg yolks room temperature
  • 1/2 cup granulated white sugar
  • 1 tsp vanilla extract
  • 1/2 cup salted butter melted (or unsalted with added salt)
  • 2 cups milk lukewarm
  • 3/4 cup cake or all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 4 large egg whites
  • 1 tbsp granulated white sugar
  • 1/4 tsp salt

Method
 

  1. Grease and line an 8x8-inch (20x20cm) baking pan with parchment paper.
  2. Beat the egg yolks with sugar and vanilla until creamy and pale, about 4-5 minutes. Gradually add the melted butter, mixing on low speed.
  3. Sift in the flour and cocoa powder, stirring until smooth, then slowly add lukewarm milk while mixing. Set aside.
  4. Preheat the oven to 325°F (170°C).
  5. In a clean bowl, beat the egg whites for 1 minute, then add sugar and salt, beating until stiff peaks form, about 4 minutes.
  6. Gently fold the whipped egg whites into the yolk mixture in two parts, using a spatula.
  7. Pour the batter into the prepared baking pan and bake for 40-45 minutes or until the top is firm.
