Method

  2. In a separate bowl, whisk together the warm milk, melted butter, and vanilla extract until well combined.
  3. Gradually pour the wet ingredients into the dry ingredients while stirring with a wooden spoon until a dough forms.
  4. Transfer the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover with a clean cloth, and let it rise in a warm area for about 1.5 hours or until doubled in size.
  6. Punch down the risen dough and roll it out to about 1/4 inch thickness.
  7. Cut the dough into 2x2 inch squares using a sharp knife or pizza cutter.
  8. Heat vegetable oil in a deep fryer or large pot to 360°F.
  9. Fry the dough squares in batches for 1-2 minutes per side until golden brown.
  10. Drain the beignets on paper towels and dust generously with powdered sugar before serving.
