  • 1 red bell pepper, diced

  • 3 eggs
  • 100 g all-purpose flour
  • 200 ml milk
  • 100 ml light cream
  • 100 g grated cheese (like emmental, gruyère, or goat cheese)
  • 1 teaspoon dried Herbes de Provence

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add onions, zucchini, red bell pepper, and broccoli, and sauté for about 5 minutes until softened slightly.
  3. In a mixing bowl, whisk together eggs and flour until smooth. Gradually pour in milk and cream while whisking to prevent lumps. Stir in grated cheese and Herbes de Provence, seasoning with salt and pepper.
  4. Lightly grease a baking dish. Spread the sautéed vegetables evenly across the bottom. Pour the batter over the veggies, ensuring they are fully covered.
  5. Bake in the preheated oven for 30–35 minutes until the top is golden brown and the center is firm. Let it rest for 5 minutes before slicing.
