- Chop your veggies into bite-sized pieces and press the tofu to remove excess water.
- Cut the pressed tofu into cubes.
- Mince the garlic and grate the ginger.
- Heat vegetable oil in a large skillet or wok over medium-high heat and add the tofu cubes.
- Cook the tofu until golden brown on all sides, then transfer to a plate.
- Add sesame oil to the same pan and stir-fry the chopped veggies for 4-5 minutes.
- Add the minced garlic and grated ginger towards the end to avoid burning.
- Return the tofu to the pan, add the cooked brown rice, and drizzle soy sauce over everything.
- Mix well and let it cook for another 2 minutes; adjust seasoning with salt and pepper.
- Garnish with sesame seeds and green onions before serving.
