Ingredients
  

  • ½ cup fish sauce
  • ½ cup packed light brown sugar
  • 8 cloves garlic, crushed
  • 1 tablespoon vegetable oil
  • 2 pounds chicken wings, separated into drumettes and flats
  • 1 tablespoon chopped peanuts (optional)
  • 1 tablespoon chopped cilantro (optional)

Method
 

  1. In a bowl, combine the fish sauce, brown sugar, crushed garlic, and vegetable oil to create the marinade.
  2. Place the chicken wings in a large zip-top bag or bowl, pour half of the marinade over, and let them marinate in the fridge for 2–3 hours.
  3. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  4. Arrange the wings skin-side up on the baking sheet and bake for about 30 minutes until golden brown and crispy.
  5. Simmer the reserved marinade in a small saucepan until it thickens into a glaze.
  6. Brush the cooked wings with the glaze and return them to the oven for another 5 minutes.

Notes
