Ingredients
  

  • 1 cup graham cracker crumbs
  • ½ cup melted butter
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup white chocolate chips, melted and cooled
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, diced
  • ½ cup fresh strawberries, sliced (for topping)
  • ½ cup white chocolate chips, melted (for topping)

Method
 

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well combined, then press into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the softened cream cheese until smooth, then add melted and cooled white chocolate, granulated sugar, and vanilla extract. Mix until combined.
  4. Add the eggs one at a time, mixing well after each addition, then gently fold in the diced strawberries.
  5. Pour the filling over the prepared crust and bake for about 45-50 minutes, until the center is set but slightly jiggly.
  6. Allow the cheesecake to cool in the oven for about an hour, then refrigerate for at least 4 hours or overnight.
  7. Before serving, top with sliced strawberries and drizzle with melted white chocolate.
