  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked white or brown rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 1 tbsp soy sauce or tamari for gluten-free option
  • 1 tsp sesame oil

Method
 

  1. Start by cooking your rice according to the package instructions.
  2. While the rice is cooking, chop your veggies: dice the bell peppers, onions, and carrots; cut the broccoli into small florets.
  3. In a large skillet, heat the olive oil over medium heat, add garlic, and sauté for a minute.
  4. Toss in the diced onions and cook until they start to soften.
  5. Add the bell peppers and carrots, and cook for another 5-7 minutes, stirring occasionally.
  6. In a separate pan, heat more olive oil and add the chicken breasts seasoned with salt and pepper.
  7. Cook the chicken for about 5-6 minutes on each side or until golden and cooked through, then let it rest before slicing.
  8. Add the cooked rice to the skillet with the veggies, mix in soy sauce and sesame oil.
  9. Stir until well-coated, place the sliced chicken on top, and serve hot.
